Format

Fast, not fast food

One bowl, one counter. Just the time it takes to drain the pasta al dente. Speed comes from the format, never from the cooking. Sauces are built in the kitchen the way they are built in Italy, then finished with the pasta to order.

Space

Open kitchen, mostly out the door

Takeaway and delivery carry the volume. Ten seats for people who want to eat standing over a bowl. Nothing is hidden: the kitchen is in front of you, and that is the only marketing we run.

Recipes

Fixed by an Italian chef

Nothing is built to order. Each of the seven recipes was developed, tested and closed before opening. You are not asked to design dinner. That is our job.

Packaging

What a mess

Black paper. Worn steel. A bowl built to leave the kitchen without pretending it came from anywhere else.

Sourcing

100% Italian ingredients. Italian chefs. No compromise.

  • Pasta from Italian producers, cut with bronze dies. Nothing else considered.
  • Pecorino Romano DOP and Parmigiano Reggiano DOP. No blends.
  • San Marzano tomatoes. Guanciale, not bacon.
  • Olive oil from a single Italian region per batch.
  • Kitchen led by Italian chefs. Recipes are not adapted for the local palate.
